Kristen from Jersey City New Jersey sent me this awesome tasty classic potato salad recipe. To get it started, first you will want to peel and cube your potatoes. Next place your cubed skinless white potatoes into a boiling pot along with a tiny pinch of table salt. Cover your potatoes with water, then boil them until they are tender, which generally will take ten minutes or so. Rolling along, next boil your eggs for ten minutes. Once your eggs have been cooked, remove them from their shells and chop them up. You will now want to take out a salad bowl, and then combine together the cubed potatoes and chopped eggs. Next you will want to stir into the salad the chopped celery and chopped Vidalia onion. After all of that is done, you are ready to create your salad dressing. Take out a small bowl, and whisk together all of the real mayonnaise, coarse ground black pepper, table salt, sweet pickle relish, and Dijon mustard. Once the dressing is uniform and consistent, stir it into your salad, making sure all of the ingredients are evenly coated in the dressing. Lastly you will want to toss a lid on to the salad bowl, and then place the bowl into the refrigerator to chill for an hour or two. That wraps up this potato salad recipe, we hope you enjoyed it.
