Preparation Instructions:
I have to give a shout out to Patty from St. Petersburg Florida, thanks for sending us this potato pasta salad recipe. To get started, first you will want to boil your rainbow rotini for roughly fifteen minutes, or until they reach a desired softness. Place your drained pasta into a large salad bowl. Next you will want to boil your fresh new red potatoes with their skin. After about twenty minutes the potatoes should be tender, so remove them from the pot, chop them up, then stir them in with the pasta. Next take out a cooking skillet, and fry your applewood smoked bacon until it's crispy and brown. When the bacon is cool enough to handle, crumble it all into your potato and paste mixture. Next you will want to vigorously stir into the salad the ranch dressing, organic mayo, chopped green bell pepper, and diced spring onions. Stir the salad until you have a nice even distribution of ingredients. At this point you can either serve the dish at room temperature, or you can chill it for roughly two hours, which should sharpen all of the delicious flavors. Cheers, we really appreciate you checking out this potato salad recipe.
