Many thanks to Chris from Hillsboro Oregon for submitting this delicious classic potatoe salad recipe. To begin the recipe, please fill a boiling pot with water and a pinch of salt. Bring the water to a rolling boil, then add in the unpeeled cubed new red potatoes. Once your potatoes are tender yet firm, remove them from the pot, drain off any excess moisture, and then place them inside a large salad bowl. Moving along, next you will want to boil your eggs, remove the shells from them, and then chop them up. Place the chopped hard boiled eggs in the bowl with the potatoes. Next take out a mixing bowl, and then add in the red wine vinegar, Dijon mustard, real mayonnaise, diced fresh parsley, fine ground kosher salt, ground black pepper, diced sweet pickles, diced green onions, and chopped celery. Mix these ingredients up so that you have an even distribution of ingredients. Next pour the mixture over the top of your eggs and potatoes, and then mix up the salad. Lastly place a lid on your bowl, and then slide the salad into the refrigerator to chill for roughly two hours, which will give the dish time to flavor blend.
