Sophia from Milwaukee Wisconsin has allowed us to publish her French potato salad recipe. To get started, first you will need to take out a boiling pot, fill it with water, sprinkle it with salt, and then bring it to a boil over medium high heat. Next you will want to peel your potatoes, and then add them to the boiling water, cooking them until they are tender, which should take twenty five minutes or so. Once the potatoes are done, remove them from the pot, chop them up, and then place them into a large salad bowl. Moving along, next take out a small mixing bowl, and whisk together the extra virgin olive oil, Tarragon vinegar, beef consomme, diced spring onions, diced fresh green parsley, kosher salt, and coarse ground black pepper. Once mixed, pour this warm dressing over the top of your potatoes, place a lid on the salad bowl, and then toss the salad. Once your potatoes are evenly coated with the dressing, then you will want to slide the bowl into the refrigerator to chill for four hours, as this will allow the salad time to flavor blend.
