Tony from Harlem New York sent me this awesome Italian potato salad recipe. To get started, please take out a large boiling pot. Place your peeled white potatoes into the pot, then cover them with water. Bring your potatoes to a boil over medium high heat, and then let them cook for roughly twenty minutes, or until they are tender to poke with a fork or knife. Once your veggies have cooked, drain the water from the pot and let the potatoes cool. Once cool, chop up the potatoes and then add them to a sealable salad bowl. You will then want to whisk into the salad bowl the white wine vinegar, Italian extra virgin olive oil, fresh minced garlic cloves, and diced fresh green parsley. Once your salad is evenly stirred together, place a lid on the salad bowl, and then refrigerate the salad for roughly eight hours.
