This excellent grilled potato salad recipe is from Magda of Chicago Illinois. To begin first you will want to boil your whole potatoes with their skin for roughly twenty minutes, or until they are tender. Once the potatoes are cooked, drain the water from them, then place them in a shallow pan. Next drizzle roughly six tablespoons of extra virgin olive oil over the boiled potatoes, then stir the vegetables around so that they get a nice even coating. Next stir in half a teaspoon of kosher salt, and half a teaspoon of ground white pepper. Moving along, next you will want to let the oiled potatoes cool to about room temperature. Once cooled, carefully slice each potato in half, and then stir the mixture again to make sure that the new exposed potato side gets some seasoned oil on it. You are now ready for the grilling process, so fire up your backyard barbecue, and bring it to a medium high heat. Don't forget to clean your grill grate. While your barbecue is heating, take out a small cooking skillet and set it on a burner over medium high heat. You will then want to fry up your thin cut peppered breakfast bacon. Once the bacon is done, set it on a plate to cool. By this time your barbecue will be heated, so grill your potatoes until they are golden brown and well done. Lastly take out a large serving bowl, and then stir together the grilled potatoes, crumbled bacon, mayonnaise, apple cider vinegar, two tablespoons of extra virgin olive oil, half a teaspoon of salt, and half a teaspoon of pepper.
